I've been taken the General Jackson cruise, but most people say it's okay. I would guess that the food and service isn't quite as good as a typical upscale restaurant and that you're paying more for the "event" than for the food itself.
Anyway, if you just want some restaurant choices, here are some that are in downtown or near downtown that are a cut above the average: Merchant's (ask for upstairs), Bound'y, the Palm, Jimmy Kelly's (recommended), Morton Steakhouse, the Stockyard Restaurant (recommended), Jack's Bar-B-Que, and the Capital Grille at the Hermitage Hotel.

The General Jackson goes down the Cumberland River - it's a good way to see downtown Nashville, also, good if weather is nice because you'll definitely want to sit outside on deck. Make sure you go as long as there's a good show or performance lined up. But, if you're really looking for some fine dining....alleycat really did suggest some great places! Especially The Merchant, Bound'ry (good bar) and the Stockyard Restaurant (which is "very old Nashville establishment" also good bar, (attracts a lot of business people). And of course The Grille at The Hermitage. Yum. All very nice!
