Know about the Elliston Soda Shop, but it's not the greatest soda. Where else to find a good one?

I would recommend Scoops Ice Cream Shop, located about 10 minutes outside of Nashville. They have over 10 different ice cream sodas to choose from!
Two of their most popular ice cream sodas are the Fuu Fuu Berry Float and the Root Beer Float.
Here is their contact info:

Although not right in Nashville, I think the best place for these is Strattons in Ashland City. It isn't like you can get to Ashland City without coming through Nashville! Strattons has been open since the 50's. It is very clean and still has the little individual jukeboxes on the table. Looks like it stepped out of an Elvis or Happy Days movie set. It's a great place to stop if you're making a wildlife viewing trip, like going along the Bicentennial Trail to see the nesting bald eagles. There are several nests in the Ashland City area. The endangered whooping cranes are frequently visiting the Bells Bend area. There's a great park out there, too. Going to see these things is a great day trip.
